Magnus Nilsson is head chef of Fäviken Magasinet restaurant in Sweden. After training as a chef and sommelier in Sweden he worked with Pascal Barbot of L’Astrance in Paris before joining Fäviken as sommelier. Within a year he was running the restaurant. Magnus features in the Emmy-Award winning US PBS series The Mind of a Chef and the Netflix docuseries Chef’s Table. In 2015 he won the White Guide Global Gastronomy Award.

Sami Flatbreads (Gaahkoeh / Gáhkku (Sami) – Glödkaka (Sweden)

Makes 20 cakes

Preparation and cooking time: 1 hour

Rising time: 45 minutes

Dissolve the yeast in the water or reindeer broth in a large bowl. Mix in all the remaining ingredients to form a sticky dough. Leave the dough to rise for about 45 minutes, or until doubled in size.
Tip the dough out onto a floured work counter and divide it into 20 equal pieces. Shape each piece into a ball. Roll out each ball into a small flat cake.
Cook the cakes over medium heat in a dry frying pan until golden on both sides.

Ingredients 50 g/2 oz fresh yeast 1 litre/34 fl oz (4 1/4 cups) water or reindeer broth 70 g/2 3/4 oz (3 1/2 tablespoons) golden syrup 7 g/0.24 oz (1 1/2 teaspoons) salt 50 ml/1 3/4 oz (3 1/3 tablespoons) neutral cooking oil or rendered reindeer fat 800 g/1 3/4 lb (6 2/3 cups) plain (all-purpose) flour, plus extra for dusting 500 g/1 lb 2 oz (4 cups plus 2 tablespoons) fine rye flour
