


These Cheesy Buffalo Chicken Toasts are perfect to eat for lunch or serve at any party or gathering! They’re basically turning my favorite Buffalo Chicken Dip into an easy-to-grab finger food. I really enjoy making these for lunch to eat alongside a side salad or a cup of soup, but they’re also terrific to serve at a party or while you’re watching the big game on TV.
You’re going to love how easy these are to make. Just toast the bread slices in the oven, mix together the topping while they’re toasting, top the bread and put it back in the oven until warmed through! How to Serve/Store/Reheat
If you’re serving these as a finger food at a group gathering, it’s easy to double the recipe if needed to serve a crowd. If you’re planning to eat these for lunch (or any other meal) and only using a few at a time, you have two options (and both work great):
- You can mix together the entire batch of topping as written but then only toast and top as many crostini/mini toasts as you need. The remaining dip/topping can be saved in the fridge to make more for a few days.
- You can also just make them all as directed in the recipe and then refrigerate the leftovers and reheat them as needed. I’ve reheated them straight from the fridge into my air fryer at 320 degrees for 5-6 minutes and they were delicious!


Recipe Notes
- Chicken: You can use any type of cooked chicken breast in this recipe, just shred it or chop it small. It’s a great way to use leftover baked or grilled chicken or rotisserie breast meat, but you can also just cook up a chicken breast using your preferred method.
- French Onion Dip: Traditionally Buffalo Chicken Dip uses blue cheese dressing, or ranch if you’re not from Buffalo. My husband isn’t a huge blue cheese fan and I don’t love ranch, so lately when I make Buffalo chicken dip I’ve been making it with French Onion Dip instead. We both love it! In Buffalo we use Bison Dip brand, but Heluva Good French Onion Dip, or any similar type will work great as well. If you want to stick to blue cheese or ranch dressing, you can easily substitute either one.
- Cream Cheese: Look for 1/3 less fat cream cheese for this recipe, which is also called Neufchatel cheese. You’ll want to bring it to room temperature before using it here or else it will be difficult to stir together! Full fat cream cheese can of course be substituted, but will alter the estimated nutrition facts and WW Points. I wouldn’t recommend using fat free cream cheese because it just isn’t good.
- Baguette: A French baguette works great for this recipe. You want your slices to be about ½ ounce each, and how thick that slice is will vary slightly based on the diameter of your loaf. Mine are about ½ inch thick cut diagonally, but you can always weigh out 7.5 ounces of bread and then cut the slices from there.

Cheesy Buffalo Chicken Toasts
These Cheesy Buffalo Chicken Toasts turn your favorite dip into a finger food, perfect to eat for lunch or serve at any party or gathering!
- 7.5 oz French bread baguette, sliced diagonally into fifteen ½ oz slices (about ½” thick)
- 3 oz 1/3 less fat cream cheese, softened to room temperature
- 3 oz cooked boneless skinless chicken breast, shredded or chopped small
- ¼ cup Buffalo-style hot sauce
- 2 tablespoons French onion dip, (such as Bison Dip or Heluva Good)
- 1 oz shredded 2% milk sharp cheddar cheese
- 1 teaspoon chopped parsley, optional

Pre-heat the oven to 400. Place the baguette slices on a foil lined baking sheet and spray the tops with cooking spray. Flip the slices over and spray the other side as well. Place the baguette slices in the oven for 6-8 minutes until lightly toasted. When finished, flip each piece of toasted bread over to await topping.

While the bread is in the oven, stir together the cream cheese, chicken, Buffalo sauce, French onion dip, and shredded cheddar cheese until well combined.

When the bread is toasted and flipped over, top each toasted baguette slice with one tablespoon of Buffalo chicken mixture, dividing it evenly amongst the bread. Return the topped toasts to the oven and bake for another 5-7 minutes until the topping is heated through and the edges of the toasts are golden and crispy. Sprinkle with parsley if using and serve.
