These Ham and Cheese Biscuit Quiches are pure comfort food in every bite. Buttery biscuit crust filled with ham, cheese, and eggs, then baked in a muffin pan until golden brown. They taste like everything you love about a classic breakfast casserole, but in a fun, handheld size that works just as well for breakfast, brunch, lunch, or even a quick dinner.

How to Make Ham and Cheese Biscuit Quiches

This recipe is super easy to make with only a few simple ingredients.  Spray a regular muffin pan with cooking spray and set aside. 

Split the biscuit dough into 8 biscuits, then split each one in half, making two circles. Press each piece into the muffin cups.

Whisk together the eggs, heavy cream, honey mustard dressing, sour cream, salt, and black pepper. Sprinkle ham and shredded cheddar cheese into each biscuit cup, then pour the egg mixture over the top. 

Bake in a preheated oven until set and lightly golden. Garnish with fresh parsley.

  • Can I use different biscuits? Yes. Regular refrigerated biscuits work best because they hold their shape, but flaky-style biscuits will work too—just expect a softer, more tender crust. Press the dough firmly into the muffin cups so it doesn’t puff up too much in the oven.
  • If you’re worried about soggy bottoms, make sure the ham isn’t wet. Pat it dry with a paper towel before adding it to the cups, and don’t overfill with the egg mixture.
  • Filling each cup about three-quarters full gives the quiches room to puff without spilling over.
  • If you want to switch things up, try swapping the ham for cooked sausage or bacon.

Prevent your screen from going dark

  • Preheat oven to 375ºF. Spray 16 muffin pan cups with cooking spray.

  • Separate the dough into 8 biscuits. Split each biscuit into 2 separate circles and press into the bottom and up the sides of the sprayed muffin pan cups.

  • Whisk together eggs, cream, honey mustard, and sour cream in a medium bowl. Season with salt and black pepper.

  • Sprinkle ham and cheese evenly into all the biscuit cups. Pour the egg mixture over the ham and cheese.
