Greek Roasted Potatoes with Feta

These Greek Roasted Potatoes with Feta are perfectly seasoned, crisped in the oven, and topped with lemon, parsley, and creamy Feta cheese! These potatoes make an absolutely delicious side dish for chicken or steak, and I know first-hand that they’re also great for breakfast or lunch. I couldn’t stop thinking about them! Originally, I was planning to make Greek fries, but doing them as roasted baby potatoes seemed like an easier way to get the same flavors, and they turned out amazing!

Not only are these Greek Roasted Potatoes delicious, but they’re super easy to make. You’ll just cut baby potatoes in half, toss them in olive oil and seasonings, and then roast them in the oven. Once they’re perfectly cooked, you just squeeze some lemon over the top and sprinkle them with crumbled Feta cheese and chopped parsley. That’s it! If I haven’t convinced you to make these yet, a serving of these scrumptious potatoes is just 208 calories or 3 WW Points (or 6 Points if following the diabetic Weight Watchers plan)! Potatoes

I used baby gold potatoes in this recipe and they turned out perfect. Mine came in a 24 ounce bag from Wegmans, but many other brands/stores sell them bagged in the same 1.5 lb quantity, such as The Little Potato Co or Good & Gather. I like using the little ones because they are easy to cut up and are already packaged in the perfect amount, but if you can’t find them, fingerling potatoes would also work. Other yellow potatoes, butter potatoes, or Yukon Gold potatoes will all work as well, you’ll just have to cut them up more.

Greek Roasted Potatoes with Feta

These Greek Roasted Potatoes with Feta are perfectly seasoned and topped with lemon, parsley, and Feta cheese!

  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic salt
  • 1 ½ lbs (24 oz) baby gold potatoes, rinsed, dried, and cut in half
  • 1 tablespoon olive oil
  • ¼ – ½ a lemon
  • 2 oz crumbled Feta cheese
  • 1 tablespoon chopped fresh parsley
  • Pre-heat the oven to 425 degrees. Line a baking sheet with aluminum foil and mist the top of the foil with cooking spray. Set aside.

  • In a small dish, stir together the oregano, thyme, dried parsley, garlic powder, salt, pepper, and garlic salt.

  • Place the halved potatoes into a mixing bowl and drizzle with the tablespoon of olive oil. Stir to coat. Sprinkle the seasoning mix from step two over the potatoes and stir until well coated.

  • Place each of the potatoes cut-side down on the foil-lined baking sheet, spread out in a single layer. Transfer the baking sheet to the oven and roast for 30-35 minutes until the edges are crisp and the centers are cooked through. The bottoms of the potatoes should be golden.

  • Take a half a lemon or a couple wedges and squeeze over the top of the potatoes to taste (I definitely didn’t squeeze out the entire half lemon, use your best judgement). Stir the potatoes with the lemon juice and transfer to a serving platter. Sprinkle the crumbled Feta cheese and chopped parsley over the top and serve.
