

This Peach and Tomato Salad is bursting with tasty summer flavor and super quick and easy to make! The smoky, crunchy, salty bacon, rich, creamy avocado, and tangy goat cheese are a delicious contrast to the sweet and juicy peaches and tomatoes. The basil adds freshness and the spring mix is the perfect base for the salad toppings. Using a bottled balsamic dressing tastes great and keeps this recipe fast and simple to throw together for a quick lunch or dinner. Once you cook the bacon, all you’ll have to do is cut a few things up and toss it all together!
Last summer I had a peach and tomato salad at a farm luncheon I went to, and though I never would have thought to pair them, they go great together! I’m excited to have recreated my own version so that I can have it anytime. This salad is perfect on its own, but I’ve also added grilled chicken to it when I wanted some extra protein. Build To Serve
You’ll love how easily this Peach and Tomato Salad comes together. All you need to do it cook the bacon according to package instructions. While it cooks, you’ll slice up the peaches, tomatoes, avocado, and basil. Then you just have to build the salads and eat! As with all salads, if you’re not using all four servings of this Peach and Tomato Salad at once, make sure to build the servings you are using and then store the different salad components separately, undressed. Then when you’re ready to make additional servings everything will still be fresh and ready to go.


Ingredient Notes
- Bacon: I pretty much always use center cut bacon in my recipes, because it tastes great, crisps up nicely, and is just a leaner cut of regular bacon. My preferred brand is Oscar Mayer because I find it consistent, delicious, and easy to find in my local grocery stores!
- Lettuce: I used a Spring Mix lettuce blend in this recipe and I think it pairs really well with the flavors represented here. You could alternatively use green leaf lettuce, a spinach blend, or romaine. *Summer 2026 note: be safe and please source your lettuce responsibly!*
- Peaches: I used white peaches because that’s what I had on hand, but yellow peaches would also be delicious. You’ll want to make sure the peaches you use are ripe, sweet, and juicy to truly get the most out of the flavors in this salad.
- Salad Dressing: I used Ken’s Lite Balsamic Vinaigrette here, which is easy to find in stores and tastes great in this salad! If you have a different preferred brand of light balsamic dressing, feel free to use that instead. I also enjoy Marzetti Simply Balsamic.
- For Added Protein: This salad is terrific as-is, but sometimes I add grilled chicken if I have some on hand or want some extra protein in my salad. I really like the Fresh Additions Fully Cooked Chicken Breast Bites for this, which I find in a 10-pack at Costco. They’re super versatile and pre-portioned into the perfect amount to use on a salad, in a wrap, or on top of noodles or a grain bowl. I love having these on hand to add quick and easy protein to meals in a pinch!
