Why Make Marry Me Pot Roast

This Marry Me Pot Roast has a funny name, but it’s so good you may have to marry whoever made it for you (if you aren’t already).

This dish has similar flavors to Slow Cooker Marry Me Chicken but in pot roast form (I think it’s even more flavorful).

The slow cooker makes the pot roast super tender and marries all the flavors together as it cooks.

Though chuck roast can be expensive, this recipe serves up to six people with sides, making it a great fancy meal at home.

The Ingredients

Beef: We use a chuck roast because it has great flavor and shreds well.

Tomatoes: To make the tomato base, we use tomato paste and an entire jar of sun-dried tomatoes with their oil.

Seasonings: This recipe is made from scratch (no packets), so you’ll need a few seasonings: Italian seasoning, onion powder, garlic powder, salt and pepper.

Onion: The onions add flavor and texture to the final dish.

Red Wine: A small amount of wine is added, it will add a rich background flavor for the marry me pot roast.

Finish it Off: Heavy cream and cornstarch make the sauce creamy and thick.

Tips and Variations

Tomato Swap: Don’t like sun-dried tomatoes? Use a can of fire-roasted diced tomatoes instead.

Skip the Wine: Use beef broth instead.

Fresh Garlic: Use one tablespoon of fresh minced garlic instead of garlic powder.

Add Heat: Add a little Italian heat by adding 1/4 teaspoon of red pepper flakes.

Add Mushrooms: Mushrooms are a great addition to this recipe if you like them. Add 1-2 cups of sliced mushrooms.

How to Serve Marry Me Pot Roast

Add a Starch: This dish is meant to be served with a starch! Mashed potatoes are my first choice, but white rice or noodles are also great. (You’ll want to try my Marry Me Chicken Pasta!)

Add Something Green: Finish plating this meal with steamed green beans, broccoli or a fresh green salad.

How to Make This Pot Roast Lower Carb?

For a lower-carb version, use fewer sun-dried tomatoes and onions, replace the wine with beef broth, and swap the cornstarch for xanthan gum.

What Kind of Wine Should Be Used?

Red wine is best for Marry Me Pot Roast! Choose something that isn’t overly sweet like a Merlot, Cabernet or my favorite is a red blend.

  • Add the chuck roast to the slow cooker. Add the seasonings, onion, sun-dried tomatoes (with their oil), and tomato paste on top.

  • Pour over the wine, and stir the tomato paste into the onions, and other ingredients on top of the roast.

  • Place the lid on the slow cooker and cook on HIGH for 5-6 hours, or on low for 8-9 hours.

  • When the cooking time is up, shred the beef with two forks. If you want to remove any fatty pieces, it’s easier to shred the meat on a plate instead of in the slow cooker.

  • In a small bowl, mix together the heavy cream and cornstarch until smooth. Pour the mixture into the beef and sauce. It should thicken up immediately.If it does not thicken right away, turn the slow cooker to HIGH, place the lid on the slow cooker and cook for another 5-10 minutes, or until the sauce has thickened.
  • Serve the shredded meat and sauce with your desired sides.

If your chuck roast is larger, you may need to season more – you can do this before or after cooking.
No Italian seasoning? Use a mixture of oregano, thyme, and basil instead.
