We’ve always loved a good Million Dollar recipe around here, but this one is so good we had to upgrade it. Consider it a little flavor inflation—this Billion Dollar Ravioli Casserole earns every extra zero. Creamy Boursin, ricotta, cottage cheese, Italian sausage, cheese ravioli, and plenty of mozzarella come together in one easy baked ravioli casserole that’s rich, cheesy, and guaranteed to have everyone asking for seconds.

How to Make Billion Dollar Ravioli Casserole

This casserole comes together quickly with simple ingredients you can find at any grocery store. Start by browning the Italian sausage in a large skillet. Drain the grease, stir in your favorite jar of spaghetti sauce, and set the meat sauce aside while you prepare the cheese mixture.

In a large bowl, combine ricotta, cottage cheese, softened Boursin cheese, sour cream, Parmesan cheese, parsley, and garlic powder until smooth. Add the frozen cheese ravioli and gently toss until every ravioli is coated in the creamy mixture.

Spread the ravioli in a single layer in a greased baking dish. Spoon the sausage and sauce evenly over the top, then finish with mozzarella and the remaining Parmesan cheese. Bake in a preheated oven until hot and bubbly with perfectly melted cheese. Let it rest for 5-10 minutes before serving so it slices easily. Sprinkle with chopped parsley for fresh basil.

Helpful Tips & Frequently Asked Questions

  • No need to boil the frozen cheese raviolibefore baking. They cook perfectly in the sauce.
    • Can I use fresh ravioli? Yes. Fresh cheese ravioli works too and may reduce the baking time slightly.
  • Let the Boursin cheese soften at room temperature so it mixes easily with the other cheeses.
  • Use your favorite jar of spaghetti sauce or marinara sauce.
    • My favorite store-bought spaghetti sauces are Trader Joe’s Roasted Garlic Marinara (green label), Carbone, Rao’s, and La Famiglia DelGrosso.
  • Mild or hot Italian sausage both work well in this recipe.
    • Can substitute ground beef, ground turkey, or turkey sausage.
  • Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
    • Can I use different cheese? Sure! An Italian cheese blend, provolone, or extra mozzarella are all delicious additions.
  • Can I substitute ground beef? Yes. Ground beef, ground turkey, or a combination of beef and sausage all work well.
  • Can I add vegetables? Absolutely. Stir in cooked spinach, mushrooms, or sautéed onions with the meat sauce.

Storage Tips

  • Make Ahead: Assemble the casserole up to 24 hours in advance, cover, and refrigerate. Add a few extra minutes to the baking time if baking straight from the fridge.
  • Freezer: Freeze the baked or unbaked casserole tightly wrapped in aluminum foil for up to 3 months. Thaw overnight in the refrigerator before baking or reheating.
    • I always freeze this unbaked. I find that it takes almost as long to reheat the dish as it does to bake it fresh.
  • Leftovers: Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheating: Reheat individual portions in the microwave or warm larger portions in the oven until heated through.
