

These easy homemade Buffalo Chicken Sandwiches are spicy, saucy, and seasoned to perfection! The chicken cooks to beautifully in 10-12 minutes on the stovetop and is served on a bun topped with crisp lettuce, juicy tomatoes, and cool and creamy blue cheese dressing (or ranch dressing or French onion dip if you prefer). My version is healthier than the type you’d usually get in a restaurant, as these Buffalo Chicken Sandwiches aren’t breaded or deep fried, but the flavor absolutely delivers! These hearty sandwiches make a delicious lunch or dinner and can be paired with pretty much any side dish. How to Serve
The recipe for these Buffalo Chicken Sandwiches includes light blue cheese dressing, lettuce, tomato, and a bun. If you aren’t a blue cheese fan, feel free to replace it with a similar creamy dressing like ranch or French Onion Dip (such as Bison dip or Heluva Good). I think these sandwiches pair well with a huge variety of side dishes! Some suggested side ideas are celery, carrots and dip, air-fried frozen French fries, a side salad, seasoned rice, chips or pretzels, or a pickle.
Cutting up the chicken
I often buy a big pack of boneless, skinless chicken breasts at the store and then use kitchen shears to trim them down to make 4-6 oz cutlets to use in recipes. Everything I cut off to make the cutlets gets cut into chunks to make chicken bites! It’s easy to make bags of cutlets to freeze and then weigh out 1 lb or 1.5 lb of chicken chunks and freeze them for later in a quart size freezer bag. That way, I always have some on hand! Buying the bulk packs of chicken breasts is cost-effective, and cutting them into cutlets and bites ensured I have what I need on hand when I go to make a recipe. I find that kitchen shears make this task go quicker and easier than using a knife, so I highly recommend using shears like these (affiliate link).

Buffalo Chicken Sandwiches
These easy lighter Buffalo Chicken Sandwiches are spicy, saucy, and seasoned to perfection!
- 1 tablespoon all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ¼ teaspoon ground cayenne pepper
- 4 (4 oz each) raw boneless, skinless thin chicken breast cutlets
- 1 tablespoon olive oil
- 3 tablespoons Buffalo wing sauce
- 4 sandwich buns/rolls, (I used Martin’s Potato rolls)
- 4 leaves green leaf lettuce
- 4-8 slices tomato
- 4 tablespoons light blue cheese dressing, (such as Marzetti Light Chunky Blue Cheese)

In a small dish, stir together your seasoning mix: flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

Place the chicken cutlets into a mixing bowl. Add the seasoning mix to the chicken pieces. Stir the contents of the bowl until the chicken cutlets are coated with the flour and spices.

Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken cutlets in a single layer with a bit of space in between them. Cook the cutlets for 4-5 minutes until golden on the bottom, then flip and cook for an additional 4-5 minutes until cooked through. Reduce the heat to low and drizzle the Buffalo sauce over the chicken. Flip the cutlets to coat the chicken in the sauce and cook on low for another 1-2 minutes until the sauce is cooked onto the chicken.

To build each sandwich, top the bottom of a sandwich roll with a piece of lettuce and 1-2 slices of tomato. Add the cooked Buffalo chicken cutlet and then top with a tablespoon of blue cheese dressing and the top of the bun.
