Brushed with melted butter and finished with a sprinkle of flaky salt, they’re the kind of rolls everyone reaches for first. Perfect for weeknight dinners or holiday meals, they disappear fast and are even better served warm.

How to Make Cloverleaf Rolls

These dinner rolls are effortless to make with only a few simple ingredients. Heat beer in a small saucepan over medium heat until it reaches 120ºF. Remove from the stove.

Stir together the roll mix, yeast packet, salt, and herbs in a large bowl. Add the beer, egg, and melted butter and mix until a sticky dough forms. Turn the dough onto a lightly floured surface and knead gently until smooth, about 5 minutes. Cover and let rest for 10 minutes.

Divide the dough into 12 portions, then cut each portion into 3 equal pieces. Roll into balls, dip in melted butter, and place three dough balls into each muffin cup. Cover and let rise in a warm place.

Bake in a preheated oven until golden brown. Brush with butter and herbs, sprinkle with flaky salt, and serve warm.

  • The secret to these rolls tasting homemade is the pilsner beer, which adds a light, slightly toasted flavor and makes them taste bakery-fresh without the extra work. Not a fan of beer or don’t have any? You can swap in hot water instead.
  • Make sure your beer or liquid is warm, not hot—around the temperature of a warm bath—so it activates the yeast without killing it. 
  • When kneading, add flour a little at a time. The dough should feel soft and slightly tacky, not dry or stiff.
  • If the dough feels sticky while shaping, lightly flour your hands instead of adding a lot more flour to the dough. 
  • Rolling the pieces into tight, smooth balls helps the rolls bake up fluffy and pull apart easily. 
  • Letting them rise in a warm spot is key; they should almost double in size and slowly spring back when pressed.
  • I use a standard 12-cup muffin tin.
  • Don’t skip the fresh herbs. They add so much flavor and really make these rolls special. You can use any fresh herbs in this recipe:
    • parsley
    • basil
    • thyme
    • oregano
  • Can I use dried herbs? Yes! Dried herbs are more concentrated, so you will need to use1/3 of the amount of fresh herbs.

Storage Tips

  • Can I make the rolls ahead of time? Yes. Shape the rolls, then loosely cover the pan with plastic wrap. Chill in the fridge for up to 24 hours. When ready to bake the next day, remove them from the refrigerator and let them stand at room temperature until doubled in size. Bake as directed.
  • Store the leftover baked rolls in an airtight container at room temperature.

  • Spray a muffin pan with cooking spray and set aside.

  • Grab a small saucepan and heat your favorite beer over medium heat. You’re looking for a temperature between 110°F and 120°F. It usually only takes about 90 seconds, so keep an eye on it!

  • In a large bowl, whisk together the roll mix, the yeast packet, salt, and 1/4 cup of your herbs. Add warm beer, the egg, and 2 tablespoons of melted butter. Stir it all together until you have a nice, sticky dough.

  • Turn the dough out onto a floured surface. Knead it gently for about 5 minutes until it’s smooth and stretchy. If it’s sticking to your hands, just add a tablespoon of flour at a time. Cover it loosely with plastic wrap and let it rest for 10 minutes.

  • Put 4 tablespoons of melted butter in a shallow bowl. Divide your dough into 12 even chunks. Then, take each chunk and split it into 3 smaller pieces. Roll those into tight little balls, dip them in the butter, and tuck 3 balls into each well of a muffin tin.

  • Cover the muffin tin with a towel and let the rolls rise for about 20 minutes until they’ve almost doubled in size.

  • Preheat oven to 350ºF.

  • In a small bowl, mix the last tablespoon of herbs with your remaining 2 tablespoons of melted butter. Set this aside.

  • Bake the rolls in the oven for 18 to 20 minutes until they are perfectly golden brown. As soon as they come out, brush them with the herb butter and finish with a pinch of flaky salt.
